Ready, Set, Flip: Pancake Day Starts Here

Pancake Day is one of those simple traditions that invites us to slow down and savour the moment. The gentle sizzle of batter in the pan, the first golden flip, the ritual of stacking and sharing – it’s comfort in its most effortless form.

At home with ILA, it’s about creating a setting that feels just as considered as the food itself. Lay the table with soft linens, bring out your favourite ceramic plates, and serve generous stacks ready to be dressed with lemon and sugar, seasonal berries or a drizzle of honey. For those who prefer something savoury, think smoked salmon, crème fraîche and fresh herbs layered onto warm, delicate pancakes.

Pancake Day doesn’t need to be elaborate. With thoughtful details and beautifully crafted pieces, even the simplest recipe becomes something to gather around and enjoy.

Foolproof Fluffy Pancakes

There’s nothing quite like the smell of pancakes cooking on a Sunday morning. Soft, fluffy, golden — they feel like a hug on a plate. The best part? You don’t need to be a master chef to make them. This foolproof pancake recipe is simple, forgiving, and always turns out perfectly light and fluffy.

Ingredients (makes approximately 8 pancakes)

  • 1 cup (125g) all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 1 cup (240ml) milk of your choice
  • 1 large egg
  • 2 tbsp melted butter or neutral oil (+ extra for frying)
  • 1 tsp vanilla extract (optional)

 Method

  • Mix the dry ingredients
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and a pinch of salt.
  • Mix the wet ingredients
  • In another bowl, combine the milk, egg, melted butter, and vanilla extract if using.
  • Combine gently
  • Pour the wet ingredients into the dry. Stir lightly until just combined — a few lumps are perfectly fine. Overmixing can make your pancakes dense.
  • Heat the pan
  • Place a non-stick frying pan or griddle over medium heat. Lightly grease with a little butter or oil.

Cooking the Pancakes

  • Pour about ¼ cup of batter for each pancake onto the pan.
  • Cook until bubbles form on the surface and the edges look set (around 2–3 minutes). Flip carefully and cook for another 1–2 minutes until golden and cooked through.
  • Serve immediately

Stack them high, drizzle with maple syrup, scatter fresh fruit, or add your favourite toppings — then enjoy straight away!

Tips for Success

Don’t overmix: A few lumps in the batter are perfect.

Keep the heat moderate: Too high and pancakes can burn outside before cooking through.

Flip lightly: A thin spatula makes it easy to turn pancakes without breaking them.

Want your pancake extra fluffy? Let the batter rest for 5–10 minutes before cooking — it makes a noticeable difference.

These pancakes are simple, comforting, and endlessly adaptable. Perfect for a lazy weekend morning, a breakfast for friends, or a little treat just for you.

Pair with a cup of tea, some fresh fruit, or even a drizzle of your favourite nut butter — and you’ve got a breakfast that feels as good as it tastes.
